Standard Canvas can't see your screen
A normal Canvas quiz is just a web page in your browser tab. A web page can't record your screen, see your desktop, or peek at other applications — the browser won't allow it without an explicit permission prompt. The most a standard quiz knows is whether the quiz tab lost focus.
How to tell if proctoring is on
Screen and camera recording only happen through a proctoring add-on, and those announce themselves loudly. You'll be asked to install software or a browser extension, grant camera and screen-share permission, and sometimes do a room scan. If your exam isn't demanding any of that, your screen isn't being recorded.
